Cheesemaking 3-Day Course

Join Aubrie of Bramble Tail for our series in cheesemaking, condensed down into a short weekend.  We’ll start the weekend on Friday afternoon, getting a fresh cheese or two starting their culturing process; then dive into our discussion on the alchemy of cheesemaking and dairy fermentations.  We’ll regroup on Saturday morning for a full day starting with learning how to milk cows and tend to grasslands, followed by a break for lunch.  We’ll spend the afternoon tending to our fresh cheeses, starting an aged cheese, and making fresh ricotta.  We’ll come back Sunday morning to complete our fresh cheeses, send our age cheeses to their aging cave, and have a closing discussion of final questions over homemade ice cream. Perfect for those interested in homesteading and starting your own home-scale micro-dairy.

Schedule of the weekend:

  • Friday 2-5pm: Introduction to Cheesemaking; Start Fresh Cheese

  • Saturday 8-11am: Farm Tour, Cow Milking & Grasslands Talk

  • Lunch Break 11-12pm: Potluck; Charcuterie Board & Salad Provided

  • Saturday 12-5pm: Tend to Fresh Cheese; Start Aged Cheese; Make Ricotta

  • Sunday 10am-noon: Complete Cheeses, Final Discussion,  Ice Cream Social!
